This is how to ring in 40, y’all!  My first post of a new decade, and it’s a winner, winner, cheesecake dinner!  OMG.  Like, stop what you’re doing and put this in your mouth right now kinda winner.  Lemon cheesecake with lemon curd: Showstopper.  The pièce de résistance is the lemon curd on top.  It’s pretty much a perfect dessert.  This cheesecake coming out of the oven looked like a work of art with some sort of tribal design!

I make a low carb “guilt-free” version of this decadence, but I had to throw down the sugary-carby real deal.  If you want to go all out and bake it in a “water bath,” I think it creates the best result, but it’s not necessary.  Just make sure if you do bathe & bake that you wrap up that bad boy in tin foil.  I made the mistake of baking my springform pan in water WITHOUT the tin foil and had a soggy, watery mess on my hands!  You can turn these into mini cheesecakes too if you’re hosting a shower or a dinner party– just put cupcake liners into tins and follow the same directions– just reduce temperature to 325 and bake for 25-30 minutes.

Lemon Cheesecake
A creamy, lemony filling with graham cracker crust topped with lemon curd.

For the crust
  1. 2 cups graham cracker crumbs
  2. 1 stick butter
  3. 1 tsp cinnamon
  4. 2 Tb sugar
For the cheesecake
  1. Three 8oz blocks of full fat cream cheese brought to room temperature
  2. One pint sour cream
  3. Juice from 2 lemons
  4. Zest from one lemon
  5. 3 eggs
  6. 1cup sugar
  7. 1 Tb vanilla extract
For the lemon curd
  1. 5 egg yolks
  2. 4 lemons juiced and zested
  3. 1 cup sugar
  4. 1 stick full fat butter cut into pieces
For the crust
  1. Preheat oven to 350.
  2. Melt the stick of butter in a sauce pan and add graham cracker crumbs, sugar and cinnamon.
  3. Pat into the bottom of a springform pan, bringing some of the crumbs up along the side edges.
For the filling
  1. In a mixer, combine room temperature cream cheese, sour cream, juice and zest of lemons, sugar and vanilla extract.
  2. Add the eggs one at a time until combined. Mix until smooth. There may be some small lumps in the cream cheese once you mix it-- no big deal.
  3. Pour into springform pan over crust.
  4. Put tin foil around entire bottom of springform pan. Fill a large roasting pan with 2 inches of hot water and put cheesecake into the water. Make sure water does not come higher than your tin foil.
  5. Bake at 350 for one hour.
For the lemon curd
  1. Whisk egg yolks, sugar, lemon juice and zest together in a bowl over a pot of simmering water (or in a double boiler) until the mixture thickens– about 8 minutes. Be careful water isn't too hot (simmering, not boiling!) or it will cook the eggs. Whisk constantly during those 8 minutes!
  2. Turn heat down and add pieces of butter one at a time and stir until the whole stick has been melted and whisked in. Lay a piece of saran wrap ON the curd and chill for 2 hours.
  3. Top chilled cheesecake with lemon curd just before serving.
Notes
  1. It's not totally necessary to cook the cheesecake in the water bath, but the texture is always creamier when I do. You can always put the springform pan on a cookie sheet and bake without it-- it's still delicious.

Baked Salmon with Homemade Pesto

I have always been a salmon lover, whether it’s lox or sushi rolls— it’s really a fish you can take in any direction in terms of cooking.  My grandma Ronnie used to put a coat of mayo on top, sprinkle with paprika and bake it in the oven.  Because salmon is a stronger tasting fish, you can rock out a more flavorful sauce or topping without losing the essence of the fish.  Inspired by my garden, I pulled a combo of fresh basil and Thai basil (which is a little more “peppery”) and turned it into homemade pesto.

I like my pesto a little bit more garlicky, so I add more than typical recipes call for.  Seriously, y’all, I could eat pesto on anything!  Fold it into pasta with a little heavy cream for a rich sauce, top it on your eggs, bake it with your chicken— it’s multi-purpose and multi-delicious!

Ingredients
  1. 2 Salmon Filets
  2. 2 cups fresh basil
  3. 3 garlic cloves
  4. 1/4 cup pine nuts
  5. 2/3 cup olive oil
  6. 1/2 cup freshly grated Parmesan
  7. salt and pepper to taste
Instructions
  1. Preheat oven to 400.
  2. Lay out the salmon filets on a baking pan.
  3. Put basil, pine nuts, parmesan, and garlic in food processor and pulse until combined. Slowly add olive oil while food processor is on until pesto is smooth. Add salt and pepper to taste.
  4. Spoon pesto over salmon filets.
  5. Bake for 15 minutes.
  6. Serve with more pesto on the side.

Hope you guys had a fabulous Memorial Day weekend!  Got steak leftovers?  No need to wait for another dinner….this is the perfect, protein packed breakfast for the next day!  You can crisp up your taters, warm up your veggies and fold that perfectly cooked steak into an omelet or scramble topped with your favorite cheese.  Steak Leftover tip:  Don’t cut up all of your steak at dinner— it will be easier to reheat without drying out it out.  Pop your meat into some tin foil (it will steam a bit while in the oven) and reheat at 400 for 5-7 minutes.

  4. salt and pepper to taste
Instructions
  1. Warm up your leftover steak, potato and vegetables wrapped in foil for 5-7 minutes at 400.
  2. Whisk together 3 eggs and pour into a hot omelet pan coated with nonstick cooking spray.
  3. When one side is done, flip omelet and cook on other side.
  4. Fold in warmed up steak, potatoes and veggies.
  5. Top with your favorite cheese.
  6. Season with salt and pepper.

I’ve been wanting a garden for years, and this spring, JP and I finally got it together and planted one!  While he built and painted the “garden box” and I picked up the plants (tomatoes, cucumbers, sweet and hot peppers, squash, icebox watermelon and basil) and poured us a glass of wine.  JP is usually a Rum Guy, but I turned him on to Yellow Tail Big Bold Red and we’re both hooked!  It’s really smooth and perfect my bald, er BOLD man!  It’s also got lots of decadent flavor and is the perfect glass to pour for an evening together with friends.  We sipped while planting and grilling!  Added bonus, it’s under 10 bucks– retailing at $7.99.  Score!

Kentucky Derby Sips and Style


 

The Kentucky Derby is this Saturday, so let’s do it up Derby style!  I loved putting together this segment because it incorporated some of my favorite things:  Bourbon, Fashion, Food and Beautiful animals.

Your resident Bourbon Babe (I alternate between the title of Bourbon Babe and Bacon Babe, by the way!) is telling you flat out— THIS is the best bourbon I have ever tasted.  Little secret— I had a shot nip before going on set yesterday and it warmed me up from the inside and cooled my nerves on the outside, y’all!  Seriously, though.  J.R. Revelry is so unique and has incredible layers of flavor— a bit of fruit and baking spices, with a finish that leaves traces of fresh oak and a hint of smoke.

In the spirit of The Kentucky Derby, I have a Ginger Fizz recipe that’s off the chain.  Just add  2oz J.R. Revelry Bourbon, 1oz Barrow’s Intense Ginger Liquor that’s made with fresh ginger, and lime juice to shaker, shake and pour on the rocks, top with seltzer and bitters, garnish with mint leaf.

Pear Ginger Dressing made with Pompeian EVOO

 One of my favorite salad dressing recipes is a pear vinaigrette with Pompeian Extra Virgin Olive Oil. Just pop a peeled pear into a food processor with a squeeze of half a grapefruit, a tablespoon of ginger, a tablespoon of honey or agave nectar. Blend and then emulsify with 1⁄4 cup of Pompeian EVOO. Add a pinch of kosher salt and toss with your favorite greens. I love building the salad with fresh pear and some crumbled gorgonzola. Stunning­­ and better-for-you!

  1. Your favorite lettuce (I like butter lettuce for this salad)
  2. 1 peeled, cored pear
  3. 1 Tb fresh ginger
  4. juice from 1/2 grapefruit
  5. 1 Tb honey or agave nectar
  6. 1/4 cup Pompeian white wine vinegar
  7. 1/2 cup Pompeian Extra Virgin Olive Oil
  8. pinch of salt
  9. 1/2 cup of Gorgonzola
  10. 1/2 cup of Pecans
  11. 1-2 pears peeled and sliced
Instructions
  1. Put all ingredients except EVOO in food processor until blended. Then emulsify dressing with the 1/2 cup of EVOO. (Pour in olive oil, while food processor is on).
  2. Toss dressing with lettuce and top with fresh pear, gorgonzola and pecans.

 If you want a light and fresh lunch or side dish— this quinoa chicken vegetable salad is slam dunk delish.  Nutrient and protein rich canned chicken combines with the freshness of canned corn, garbanzo beans, tomatoes and broth to create a super healthy dish your family will request over and over!

I just heated chicken broth and quinoa in a medium saucepan over high heat till it boils.  Cover and simmer, stirring occasionally for about 10 minutes.  Set aside to cool.  Then, once the quinoa has cooled, add diced tomatoes, chicken, garbanzos. corn, olive oil, lemon juice, parsley and pepper.  Toss to mix well.  The recipe is here on CansGetYouCooking’s site.

 My best friend from college, Marita, is from Peru and together, we explored Spanish culture by boozing our way studying our way through Spain.  I have so many incredible memories of our exploits together– including the time we sat down to our first dinner with our host family.  “Mar” already spoke fluent Spanish, but ‘Spain Spanish’ has different sayings and vocabulary (and an entirely different accent than Latin American Spanish.) Mar was explaining to our host mother that we didn’t like a lot of preservatives in our food— she used the word “preservativos.” Well, wouldn’t ya know, that’s the word for condoms in Castilian Spanish. WHOOPS!  We laughed about that for years!  Here’s a pic from the last time we saw each other— I miss this woman SO much!

For the Pollo ala Brasa (Peruvian Grilled Chicken)
  1. 1⁄3 cup soy sauce
  2. 2 tablespoons fresh lime juice
  3. 5 garlic cloves
  4. 1 teaspoon Aji Panca (Peruvian Spice)
  5. 1 teaspoon ground cumin
  6. 1 teaspoon paprika
  7. 1⁄2 teaspoon dried oregano
  8. 1⁄2 teaspoon black pepper
  9. 1 tablespoon vegetable oil
  10. 1 (3 1/2 lb) whole chickens, quartered
  11. 1 lime, quartered (for garnish)
For the Salsa Criolla
  1. 1 small red onion
  2. 1 lime
  3. 1 teaspoon fresh cilantro, chopped (optional)
For the Ceviche
  1. 2 lbs tilapia fillets or 2 lbs other firm white fish fillets, cubed
  2. 8 -10 garlic cloves, chopped
  3. 1 teaspoon salt
  4. 1⁄2 teaspoon black pepper
  5. 2 teaspoons fresh cilantro, chopped
  6. 1 habanero pepper, seeded and chopped (or real Peruvian Aji Amarillo, if you can find it)
  7. 8 -12 limes, freshly squeezed and strained to remove pulp, enough to cover fish
  8. 1 red onion, thinly sliced and rinsed in cold water
For the Pollo ala Brasa
  1. Blend soy sauce, lime juice, garlic, Aji Panca, cumin, paprika, oregano, 1/2 teaspoon pepper, and oil in a blender.
  2. Put chicken in a large sealable bag and add marinade. Seal bag and marinate, chilled, 8 to 24 hours. Turn occasionally to assure even marinating.
  3. Prepare grill for medium-high heat.
  4. Discard marinade, then pat chicken dry. Oil grill rack.
  5. Grill chicken over area with no coals (or over a turned-off burner), skin side down first, covered, turning over once, until cooked through, about 30 to 35 minutes (add charcoal to maintain heat).
  6. Garnish with lime wedges.
  7. (IF OVEN ROASTING - Preheat oven to 500°F, and roast chicken for 30 minutes in a 13x9-inch roasting pan with 1 cup water. After 30 minutes of roasting time, tent with foil and continue roasting until browned and cooked through, or about 15 minutes longer.).
For the Salsa Criolla
  1. Cut the onion in half, then slice thin to form half moon slices; Rinse the onion in cold water and place in small bowl.
  2. Squeeze lime juice into bowl to cover onion slices.
  3. Add cilantro, if using.
  4. Serve with potatoes, beets, avocado or anything you like.
For the Ceviche
  1. Combine all ingredients except red onion and mix well.
  2. Place red onion on top and let it marinate in the refrigerator for at least 2-3 hours before serving.
  3. Before serving, mix well and serve with lettuce, corn, avocado or other cold salad vegetables on the side.
  4. It is important to use a juicer that presses the juice out of the limes, not one that will tear the membrane of the lime sections since this will make the lime juice bitter.

Wedding hair has evolved over time— fortunately, we’re longer seeing the tightly curled “prom” hair!  Instead, the ultra talented Melanie Sorrow from Melanie Salon is bringing her talents to the bridal crowd with stunning styles that range from the “perfectly imperfect updo” to cinematically inspired ‘dos.  The first style is a whimsical ponytail that is all at once retro 60’s and beach babe gorgeous.  It looks simple, but there are beautiful twists to the style that only a talent like Melanie can make look easy!

I was lucky enough to be the model for the third style, a loose updo that I am currently obsessed with.  It looks like it’s about to spill out onto your shoulders, but it is secured beautifully, so I imagine you can comfortably dance your heart out without any worries!

I love Italian dishes, but they tend to be super carb heavy (read: pasta) and the sauces often use loads of flour to thicken them up.  This piccata dish is a version of a Cooking Light recipe I found online and modified a bit– I cut the flour and sugar in half to make it more low-carb friendly.  I also cooked the lemons longer to caramelize them, so instead of just adding some lemony flavor, you can eat them and they practically melt in your mouth.  OMG, they’re so good!  No need to pound the chicken down, just get the thinly sliced cutlets and it saves you the work.

Ingredients
  1. 4 garlic cloves, halved
  2. 2 lemons sliced into thin rounds
  3. 1/2 tsp sugar
  4. 4 (6-ounce) skinless, boneless thinly sliced chicken cutlets
  5. Pinch of kosher salt and pepper for chicken
  6. 1 Tb olive oil
  7. 4 Tb unsalted butter (divided)
  8. 1 Tb chopped shallot or onion
  9. 1 Tb chopped garlic
  10. 1 thyme sprig
  11. 1/2 cup dry white wine
  12. 1 cup chicken stock
  13. 1/2 tsp all-purpose flour
  14. 2 Tb capers, rinsed and drained
  15. 2 Tb chopped fresh sage
Instructions
  1. Combine lemon slices, sugar, and garlic cloves in a medium bowl.
  2. Dry chicken on a paper towel and sprinkle with salt and pepper. Heat a large skillet over medium-high heat. Add 1 Tb oil and 1 Tb butter; swirl to coat.
  3. Add chicken to pan; cook 4 minutes on each side or until done. Place chicken on a plate. Add remaining 1 Tb butter oil to pan; swirl to coat. Add lemon mixture to pan; cook 5-6 minutes until lemon slices are lightly browned, turning occasionally. Return lemon mixture to bowl.
  4. Wipe pan with paper towels. Heat pan over medium heat. Add 1 Tb butter to pan; swirl until butter melts. Add shallot, garlic, and thyme sprig; cook 1 minute. Add wine to pan, scraping pan to loosen browned bits. Bring to a boil; cook 3 minutes or until liquid almost evaporates. Add remaining stock and flour to pan, stirring with a whisk.
  5. Bring to a boil; reduce heat, and simmer 3 minutes or until liquid is reduced to about 2/3 cup. Remove pan from heat, discarding thyme sprigs.
  6. Stir in remaining 1 Tb butter and capers, stirring until butter melts. Return chicken and any juices to pan; turn to coat with sauce. Top chicken with lemon mixture. Sprinkle with chopped sage.
