Bacon. Jam. Now that’s my jam. OMG. Seriously, y’all, you’ll never go Smuckers again. You’ll want to put this on EVERYTHING, from toast to tacos. OMG. Sweet, caramelized bacon meets cranberries. You can make it without the cranberries and it’s just as (if not more delicious) but since we’re cooking with cranberries this week, it is a perfect addition to the bacon jam. Enjoy! To order the incredible cranberries showcased in my “What’s in Season” segment on AMHQ, check out Cape Cod Select who ships cranberries all year long!
Cranberry Bacon Jam
Ingredients
- 1 pack center cut bacon
- brown sugar
- 3 Tb cranberry sauce
- 1 red onion
- 2 Tb sherry
- 2 Tb butter
Instructions
- Lay out individual slices of bacon on a rimmed bacon sheet and press brown sugar into each slice from top to bottom.
- Cook at 250 for an hour, turning over at the half way mark.
- While bacon is cooking, chop onion in slices and cook in 2 Tb of butter in a saucepan on low/medium heat for 30 minutes until soft and caramelized. Add sherry and crank up heat until alcohol cooks off, about 5 minutes. Turn heat down and continue cooking another 10 minutes. Let cool.
- Once bacon cools, combine all the bacon, the onion and the cranberry sauce in the food processor and pulse until bacon is completely combined with onion and cranberry.
- Top onto sweet potatoes, or serve with turkey or beef.
Let me start by saying that my son who is now 30 yrs old does not/will not eat onions…until now. ; )
I made this jam and everyone loved it! My son said that it was so good that you could just put it some bread and eat it. That was before he knew there were onions in it.
It has taken me thirty years to get him to eat onions….and, he loved them!
Thank you!
Hi Benita! That makes my day to hear that! The bacon jam rules! And I’m sure it’s fabulous on toast too! ( :
Saw this on Weather Channel and based on Sam Champion’s reaction to it, I had to make it. He’s right, it’s fabulous on sweet potatoes. I’ve made it twice now and its a hit with everyone who tries it. And I see your latest post recipe for the shaved broccoli salad, well, you’re continuing that brown sugared bacon thing. How can anything not be good with bacon, right?!
You know, it’s better with bacon!! ( :
Oh, a question – what size is a “pack” of bacon?
Hi Kat– just the regular package you would get at the grocery store…they are usually all about the same size, more or less. I prefer Burgers Smokehouse Bacon (Applewood smoked). Let me know how it turns out!
Grocery stores are selling 12 oz packages besides the usual 16 oz size, that’s why I asked. A pound seems like alot of bacon, but then…. 🙂 I’ve made this 4 times now, it comes out great. I use a pound of the thick sliced applewood-smoked bacon that Costco sells. All I can say is fabulous x 3 so thanks for this recipe. You always have the most interesting and yummy recipes!
Hi Kat! Thanks so much for sharing! I’m so happy you like the recipe….keep me posted on any new bacon recipes you try– I’m always looking for new ones ( :
