Video: Putting Together Your Perfect Pantry

Video: 45 Pounds Lost and Bikini Reveal

bikini before afterSo, this is what 45 pounds looks like— and a whole lot of sweating, running, lifting and low-carbing. (More on that in a minute.)  And yeah, that actually IS me on the left– (pretend like I’m not wearing that hideous doo-rag or the spare tire around my mid-section.)  Here’s the thing… when I took that “before” pic and then gasped when I saw how far I’d gotten off track with my diet and exercise, I NEVER IMAGINED I would publicly share it.  It was something to bury deep in my cell phone as a reminder to not hit a late night drive thru and to say no to that third glass of wine.

But as I started my journey to get in shape high school skinny, it became the motivating factor for my lifestyle changes. Lifestyle, indeed. People ask me all the time when they see my food porn on Facebookand Instagram, “But do you really EAT all of that stuff?”

In a word, NO.

But I eat a lot of it. JP still requests chicken fried steak and scalloped potatoes and crazy chef chick that I am, sometimes I make separate meals for us. For me, that means, no breading and no starches. In fact, I cut out all the processed crap from my life. That translates to no sugar, nothing from a box, no pasta, rice, flour, anything with wheat or gluten, and all bread. And all french fries.

So, you ask, “Then what the hell DO you eat??”

I chow down on lots of low carb delish– bacon, any and all cuts of meat, cheese, dairy and veggies. It’s a ketogenic style of eating. Just don’t call it a diet, because that is a 4 letter word that is very, very bad. I will never go hungry on a DIET again. FYI, I have an entire section on this blog devoted to low carb/ketogenic meals!

Here’s how it works

 
When carbohydrate containing foods are digested, they are broken down into blood sugar (glucose) in the body. The more carbohydrates we eat, the more glucose is made. As diabetics know, high blood sugar is toxic to the body. Eating more fats and protein and less carbs causes our internal biochemical pathways to switch to using our stored fat for fuel instead of burning sugar. 

So basically, when you’re eating a ketogenic diet, your body is burning FAT for fuel. For me, that resulted in putting on a teeny tiny bikini for the first time in 10 years. I’m really freaking proud of what I accomplished. And, more than that, I feel fabulous– with more energy and more confidence than I’ve ever had in my entire life.

Here are my stats: I’m 5’11 and started out at 190 pounds with 34% body fat. Today I am a lean 145-148 pounds and dropped to 18% body fat.

Low Carb Candied Bacon Dipped in Chocolate and Peanut Butter

Candied bacon that’s low carb?  Wha-what?

Low Carbers rejoice!  You CAN have your candied, chocolate covered, peanut butter dipped bacon AND eat it too….only 8 net carbs per slice, y’all!

Just don’t go Bacon my Heart…

Low Carb Candied Bacon Dipped in Chocolate and Peanut Butter

Low Carb Candied Bacon Dipped in Chocolate and Peanut Butter

Ingredients

  • 1 package of center cut bacon
  • Splenda Brown Sugar Blend (about ½ - 1 tsp per slice of bacon)
  • Dark chocolate melting wafers (12 oz bag)
  • White chocolate melting wafers (12 oz bag)
  • ½ cup peanut butter
  • Toppings: Cayenne pepper, crushed red hots and sprinkles

Instructions

  1. Preheat oven to 300.
  2. Take a wooden skewer and weave it through a slice of bacon. Lay out flat on baking sheet.
  3. Repeat with the rest of the slices of bacon.
  4. Press Splenda Brown Sugar Blend into each strip of bacon.
  5. Bake at 300 for 40 minutes. Drain bacon.
  6. Melt dark chocolate wafers in a double boiler. Dip some slices of bacon in dark chocolate and decorate with crushed red hots and sprinkles.
  7. Melt white chocolate wafers in a double boiler. Set aside half of the white chocolate and mix peanut butter into the other half. Stir until melted.
  8. Dip bacon in white chocolate and white peanut butter chocolate and decorate with sprinkled cayenne and/or desired toppings.

I consider myself to be a pretty formidable baker.   I mean, after all, I won 1st place in the CBS Atlanta bake-off with a carrot cake recipe that I totally took credit for pimped from a good friend. But, decorating the cake?  That’s a whole ‘notha drama.  Thankfully, I got a decorating tip (and learned how to use a decorating tip, literally!) from Angela Shook, resident decorating Diva at Cake Art Party Store.  There’s no recipe here, folks.  Just watch and learn.  And if you really want to get all Cake Boss, take a class.  You can sign up at CakeArt.com.

Ingredients

    Pecan Topping
  • 1 stick of butter
  • ¼ cup flour
  • 2/3 cup packed brown sugar
  • ½ cup corn syrup
  • 2 eggs
  • ½ tsp vanilla
  • 3 cups coarsely chopped pecans
  • Brownies
  • 1 box Betty Crocker Original Supreme brownie mix (with chocolate syrup pouch)
  • 1/3 cup vegetable oil
  • 2 Tb water
  • 2 eggs

Instructions

  1. Preheat oven to 350. Grease bottom of a brownie pan (8x8 inch) with cooking spray
  2. In medium bowl, stir brownie mix, chocolate syrup, oil, water and 2 eggs until well blended. Spread in pan.
  3. In 2 quart saucepan, melt butter over medium heat. Stir in flour until smooth.. Stir in brown sugar, corn syrup and 2 eggs until well blended. Cook 2-3 minutes, until mixture begins to boil.
  4. Remove from heat. Stir in vanilla and pecans. Spoon pecan topping evenly over brownie batter.
  5. Bake 35-38 minutes until center is set. Cool completely, about 1 hour.
