Peanut Butter S'mores

Put your Peanut Butter S’mores in little ramekins for the perfect portion.

This is the lovechild of S’mores and Peanut Butter, folks.  All that creamy, chocolate, melty delish in an itty bitty ramekin so you get all the yum in a few bites with zero dessert shaming!  In fact, the only guilt you will feel is when your friends are “oooohing” and “aaaahing” with every bite, because these are so easy to make!

Just layer your ramekins with mini Reeses Peanut Butter Cups….

First step: Layer mini Reeses Peanut Butter Cups in the ramekins.

Then, top with little marshmallows…

Second Step: Put mini marshmallows on top of Reeses Peanut Butter Cups.

Put the ramekins on a baking sheet in an oven at 500 for 10-15 minutes until warmed through and lightly browned on top.  Or, try putting those bad boys on the grill to get a little smoky flavor added in.  This a great dish to serve at a tailgating party and the individual portions make a big impression!

FinalConeDownIce cream is sooooo much better with a super awesome cone.  It’s so easy to transform a plain cone into a show stopper with a few simple ingredients: melting chocolate, sprinkles, crunchy goodness and whatever other toppings you want to include!

Create an ice cream cone “decorator station” with your favorite toppings and the melting chocolate to dip cones in.

Once you get your decorator station set up, spread out some wax paper or parchment paper down on your counter.  Then, when you dip and sprinkle with toppings, shake off excess and place on paper to dry.

Melting chocolate only takes 10-15 minutes to dry and then you’re ready for Blue Bunny ice cream!

Add peaches to your salsa for sweet, fresh flavor

On National Peach Day, get creative with Georgia’s favorite fruit!  I never get tired of salsas, because you can switch up the flavor by swapping out a few simple ingredients.  Instead of tomatoes, dice up fresh peaches, then add in red onion, cilantro, red bell pepper, jalapeno and lime juice.  It’s a perfect topping for salmon, shrimp or to top onto tacos.  I love the crunch factor of crostinis, so I just toasted slices of a loaf of french bread with some butter, spread some goat cheese on each piece and then topped with the salsa.  Scrumptious!

For the salsa
  1. 3 peaches, peeled and diced
  2. 1 jalapeno diced (no seeds)
  3. 1/2 red onion diced
  4. handful of fresh cilantro chopped
  5. 1 red bell pepper diced
  6. juice from one lime
  7. pinch of kosher salt
For the crostinis
  1. 1/2 stick butter
  2. french bread crostinis toasted
  3. goat cheese
For the salsa
  1. Combine ingredients and top on goat cheese crostinis

  1. Slice a loaf of french bread into crostinis
  2. Melt butter and toss crostinis in melted butter
  3. Bake at 350 for 30 minutes or until lightly browned (flip over after 15 minutes for even browning)
  4. When slightly cooled, spread goat cheese on top of crostinis and top with salsa

 A great accompaniment to the salsa is a new bubbly from Barefoot Wine— appropriately titled “Barefoot Bubbly Peach Fusion.”  It’s made with natural peach flavor– think Georgia Peach with hints of honesuckle and fresh nectar.  Pretty much summer in a glass, y’all!  Sipping this with the peach salsa really brings out the sweetness of the peaches and the creaminess of the goat cheese.

 It also goes beautifully with grilled peaches drizzled with lavender honey. (Just add some lavender blossoms to a cup of honey and let them add fragrance to the honey for a couple hours.  Pull out the lavender and drizzle honey on the grilled peaches.  Keep the skins on the peaches when you grill them so they stay together….I brush a little butter (and sometimes some brown sugar on top), then grill face down for 3-5 minutes until you get those gorgeous grill marks!

Honey-Peach Vanilla Ice Cream Sundaes

1/3 cup walnut halves

2 medium peaches, peeled and sliced

1/4 cup honey

1/4 teaspoon ground cinnamon

Pinch ground cloves

4 scoops (1/2 cup each) Blue Bunny vanilla ice cream, divided into four dishes

2/3 cup fresh raspberries 

Directions:

In a medium skillet over medium heat, cook walnuts until toasted, about 5 minutes, stirring constantly. I like to add in a touch of butter when I’m toasting them.  Let walnuts cool. Chop coarsely. Set aside.

In same skillet over medium heat, combine peaches, honey, cinnamon, and cloves. Cook and stir until peaches soften. Cool several minutes before spooning over four cups of ice cream. Top with nuts and berries.

Ice Cream Pebbles No Bake Cheesecake and Marshmallow Stars

I love to entertain with desserts that are low maintenance and don’t require an oven!  This is a spin on my original No Bake Cheesecake that is always a hit.  Post Cereals just launched Ice Cream Pebbles, and this is the kind of ice cream that doesn’t melt— it’s yummy, crunchy bits of Pebbles in Rainbow Sherbet flavor.  I incorporated these into both the crust and the cheesecake!  You can use Oreo cookie crumbs or Graham Cracker crumbs for the crust— I tried both and liked the Oreo version the best.  To make it even easier, though, buy the premade crumb crusts– in regular size or even mini for little versions of the cheesecake.  Super easy, super cute, super delish!

You can also use Ice Cream Pebbles to make adorable Marshmallow stars which I put on Lollypop sticks.  Another really imaginative and fun thing you can do Ice Cream Pebbles that is a great activity for the kids and a great way to celebrate the 4th of July in rainbow Star Spangled fashion!

For the cheesecake
  1. 1 block full fat cream cheese
  2. 1 regular sized tub of whipped topping (like Cool Whip)
  3. 1/4 cup sugar
  4. 1 tsp vanilla
  5. 1 cup Ice Cream Pebbles (plus more to sprinkle on top of cheescake)
For the crust
  1. 2 cups of Oreo crumbs or Graham Cracker Crumbs
  2. 1 stick butter
  3. 1 cup Ice Cream Pebbles (turn into crumbs by smashing them up a bit)
For the Marshmallow Stars
  1. 3 Tb butter
  2. 1 (10oz) package of Marshmallows
  3. 4 cups Ice Cream Pebbles
  4. Star shaped cookie cutter
  5. Lollipop sticks
For the No Bake Cheesecake
  1. Combine room temperature cream cheese, whipped topping, vanilla and sugar in a standing mixer. Add Ice Cream Pebbles.
For the Crust
  1. Melt 1 stick of butter in a large sauce pan. Add in Oreo or Graham Cracker Crumbs and Ice Cream Pebbles. Stir to combine.
  2. Press into the bottom of a springform pan.
  3. Pour in No Bake Cheesecake batter over crust.
  4. Sprinkle with more Ice Cream Pebbles on top.
  5. Cover with tin foil and freeze.
  6. Take out of freezer 30 minutes before serving.
For the Marshmallow Stars
  1. Melt butter in a large sauce pan.
  2. Add marshmallows and let them melt on low/medium heat.
  3. Add Ice Cream Pebbles and stir to combine.
  4. Press into a 9 x 11 cake pan and let cool.
  5. Using a star cookie cutter, cut out stars from the cake pan.
  6. Skewer bottom of each star with a lollipop stick.

This is how to ring in 40, y’all!  My first post of a new decade, and it’s a winner, winner, cheesecake dinner!  OMG.  Like, stop what you’re doing and put this in your mouth right now kinda winner.  Lemon cheesecake with lemon curd: Showstopper.  The pièce de résistance is the lemon curd on top.  It’s pretty much a perfect dessert.  This cheesecake coming out of the oven looked like a work of art with some sort of tribal design!

I make a low carb “guilt-free” version of this decadence, but I had to throw down the sugary-carby real deal.  If you want to go all out and bake it in a “water bath,” I think it creates the best result, but it’s not necessary.  Just make sure if you do bathe & bake that you wrap up that bad boy in tin foil.  I made the mistake of baking my springform pan in water WITHOUT the tin foil and had a soggy, watery mess on my hands!  You can turn these into mini cheesecakes too if you’re hosting a shower or a dinner party– just put cupcake liners into tins and follow the same directions– just reduce temperature to 325 and bake for 25-30 minutes.

Lemon Cheesecake

For the crust
  1. 2 cups graham cracker crumbs
  2. 1 stick butter
  3. 1 tsp cinnamon
  4. 2 Tb sugar
For the cheesecake
  1. Three 8oz blocks of full fat cream cheese brought to room temperature
  2. One pint sour cream
  3. Juice from 2 lemons
  4. Zest from one lemon
  5. 3 eggs
  6. 1cup sugar
  7. 1 Tb vanilla extract
For the lemon curd
  1. 5 egg yolks
  2. 4 lemons juiced and zested
  3. 1 cup sugar
  4. 1 stick full fat butter cut into pieces
For the crust
  1. Preheat oven to 350.
  2. Melt the stick of butter in a sauce pan and add graham cracker crumbs, sugar and cinnamon.
  3. Pat into the bottom of a springform pan, bringing some of the crumbs up along the side edges.
For the filling
  1. In a mixer, combine room temperature cream cheese, sour cream, juice and zest of lemons, sugar and vanilla extract.
  2. Add the eggs one at a time until combined. Mix until smooth. There may be some small lumps in the cream cheese once you mix it-- no big deal.
  3. Pour into springform pan over crust.
  4. Put tin foil around entire bottom of springform pan. Fill a large roasting pan with 2 inches of hot water and put cheesecake into the water. Make sure water does not come higher than your tin foil.
  5. Bake at 350 for one hour.
For the lemon curd
  1. Whisk egg yolks, sugar, lemon juice and zest together in a bowl over a pot of simmering water (or in a double boiler) until the mixture thickens– about 8 minutes. Be careful water isn't too hot (simmering, not boiling!) or it will cook the eggs. Whisk constantly during those 8 minutes!
  2. Turn heat down and add pieces of butter one at a time and stir until the whole stick has been melted and whisked in. Lay a piece of saran wrap ON the curd and chill for 2 hours.
  3. Top chilled cheesecake with lemon curd just before serving.
Notes
  1. It's not totally necessary to cook the cheesecake in the water bath, but the texture is always creamier when I do. You can always put the springform pan on a cookie sheet and bake without it-- it's still delicious.

Cupcakes have become a thing in America.  I mean, there are entire TV shows dedicated to them.  Hello, Cupcake Wars.  I challenge you to try the most delicious, most unusually baked cupcake that has major WOW factor!  It’s GRILLED, people.  Like, thrown on the grill next to the rib eye, kinda grilled.

I scooped out the flesh from oranges that I’d halved, poured in the batter and placed the oranges in a cupcake tin.  Then, toss those babies on a heated grill.  Keep an eye on them, and after 20 minutes, you should have grilled cupcakes that are sheer perfection.  The orange rind really adds a depth to the orange flavor– the combination of the rich chocolate with the orange undertones is magic in your mouth.  Trust me.  Try it!

Ingredients
  1. For the cupcakes: (modified from an Ina Garten recipe)
  2. 1 1/2 sticks salted butter at room temperature
  3. 2/3 cup granulated sugar
  4. 2/3 cup brown sugar
  5. 2 eggs at room temperature
  6. 1 tsp vanilla extract
  7. 1 tsp orange extract
  8. juice from 1/4 an orange
  9. 2 Tb orange zest
  10. 1 cup buttermilk
  11. 1/2 cup sour cream
  12. 2 Tb brewed espresso
  13. 1 cup cocoa powder
  14. 1 3/4 cup all-purpose flour
  15. 1 1/2 tsp baking soda
  16. 1/2 tsp kosher salt
  17. 6-7 oranges cut in half, flesh scooped out
For the frosting
  1. 1 cup salted butter
  2. 1/2 cup unsweetened cocoa
  3. 3 one ounce squares of melted unsweetened chocolate
  4. 1/2 tsp instant coffee
  5. 3 Tb heavy cream
  6. 3 cups confectioners sugar
  7. 1 tsp vanilla
  8. 1 Tb orange zest
  9. 2 Tb fresh squeezed orange juice
For the batter
  1. Preheat the grill
  2. In an electric mixer with paddle attachment, cream the butter and both sugars until fluffy.
  3. Add eggs one at a time, then add vanilla, orange extract, orange juice and orange zest.
  4. In a separate bowl, whisk together buttermilk, sour cream and espresso.
  5. In another bowl, sift flour, cocoa, baking soda and salt.
  6. On low speed, alternate adding the buttermilk mixture and the flour mixture-- starting with the buttermilk mixture and ending with the flour mixture. Do not overmix.
  7. Divide the batter among the orange halves, filling about 3/4 full.
  8. Put oranges in a cupcake tin and place on grill
  9. Bake for 20 minutes, until cooked through.
For the frosting
  1. Cream butter in your mixer until fluffy.
  2. Add cocoa, vanilla, instant coffee, cream, orange juice and zest.
  3. Melt the unsweetened chocolate in the microwave and cool slightly.
  4. Add chocolate to the butter mixture.
  5. Add in confectioners sugar gradually until you get desired consistency.

Imagine a hot, melty, nutty banana s’mores….This, lovelies, is what I just pulled off the grill.  OH YEAH.  It’s freaking awesome.  Just split the ‘nana, stuff with chocolate chips, mini marshmallows, graham cracker pieces and your favorite nuts.  I sprinkled my banana with pecan bits that I sauteed in some butter, with brown sugar and bourbon.  It’s pretty much a perfect dessert!

  1. Split one banana lengthwise with the peel on, being careful not to cut through the peel.
  2. Spread open and stuff with chocolate chips, marshmallows, chopped nuts and graham cracker pieces.
  3. Wrap in tin foil and put on a heated grill for 10 minutes.
  4. Unwrap to serve, drizzle with chocolate syrup.

Spring Reset to Health: Grilled Spiced Grapefruit Ricotta Dessert and Chinese Chicken Salad with Mandarins

So, it’s that time of year….y’all know what I mean. The holidays have been over for almost 3 months, but those skinny jeans are still hanging in your closet, feeling decidedly UN-skinny.  You’ve been slacking on your workout and damn, it’s almost tank top weather.  Time for a detox Healthy Spring Reset.

No need to do the Master Cleanse for 17 days– yup, did that.  (Never again!!)  It’s just a matter of swapping out some fries for a scrumptious salad– and passing on the chocolate cake and going with grilled what?  Grilled grapefruit, lovelies.  It’s a thing. And it’s GETINMYMOUTHRAWTNOW kinda good.  Like, I am kind of obsessed with it right now.  This is my first time trying Wonderful Sweet Scarletts Grapefruit and I’m hooked– so sweet, so juicy!  These are a new brand of Texas Red Grapefruits, launched nationwide in November. I remember being a little girl and my Mom would sprinkle sugar on grapefruits to get me to eat it—- you don’t even need sugar, they are so sweet!  The Texas climate has warm days and cool nights, so they are getting some of the sweetest, premium grapefruits around.

And the lavender honey sounds fancy, but it’s super easy.  Just grab a lavender plant from the grocery store or a local florist, pop a few buds of lavender in some honey and let it soak for an hour or so.  Didn’t know you could be so fancy, did ya??

Chinese Chicken Salad with Peanut Ginger dressing and Wonderful Halos

 

This is one salad I can actually stand.  I hate salads, people. For real.  I know, I know, I’m like the 1% of chicks who chooses NOT to eat salad.  So when I do, it’s got to be really freaking good.  This one is really.  Freaking.  Good.  It’s one of those, ‘slurp it off the plate with your tongue’ yum.  The Wonderful Halos add the perfect, citrus element to this sweet and savory salad.  And they’re only in season until April, so you still have a few weeks left to enjoy these sweet, seedless mandarins.

Another Go-To in my pantry now is Great Grains Granola in both Super Nutty and Blueberry Flax.  Pop it on some Greek yogurt with some fresh fruit and call it breakfast.  Or a snack.  I keep some in a ziplock in my purse for those times when hunger starts gnawing and you really want to pull over and hit a drive thru!  They’ve got 26 grams of whole grains per serving and are made with real fruit, nuts and oats. Try this granola– you’ll find in most grocery stores.

Spring Reset to Health: Grilled Spiced Grapefruit Ricotta Dessert and Chinese Chicken Salad with Mandarins

Ingredients

    For the Grilled Grapefruit
  • 2 Wonderful Sweet Scarletts Grapefruit (peel sliced off with a paring knife) and cut into thick slices
  • 1 Tb olive oil
  • For the Spice Mix
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 Tb brown sugar
  • 1 tsp cinnamon
  • pinch of kosher salt
  • sprinkle of cayenne
  • For the Ricotta Yogurt
  • 1 cup Ricotta (full fat)
  • 2/3 cup Greek Yogurt
  • For the Lavender Honey
  • 1/3 cup local honey
  • 3-4 lavender flowers (soak in honey for one hour and remove)
  • For the Chicken Salad
  • 1 cup diced chicken
  • 3 cups butter lettuce
  • 1 cup dry coleslaw cabbage mix
  • 2 Tb each of mint, basil and cilantro chopped up
  • 1/4 cup chopped peanuts
  • Handful of snow peas
  • 5 Wonderful Halos mandarins pulled into individual pieces
  • For the dressing
  • 2 Tb garlic chopped up
  • 1/3 cup peanut butter
  • 3 Tb Rice vinegar
  • 1 Tb fresh ginger
  • 1/2 tsp sesame oil
  • 1 Tb soy sauce or tamari
  • 1/4 cup mandarin juice
  • 1 Tb honey

Instructions

    For the Grilled Spiced Grapefruit
  1. Spread the spice mix on the slices of grapefruit and heat up oil in a grill pan.
  2. Put slices of grapefruit down on hot grill pan and grill for 2 minutes on each side. Add some more spice mix to the flipped side.
  3. Mix ricotta and yogurt together.
  4. Top with grilled grapefruit and Drizzle with honey.
  5. For the Chinese Chicken Salad
  6. Whisk dressing ingredients together.
  7. Toss with lettuce, slaw, chicken, crushed peanuts, fresh herbs and mandarins.

I had never had a bra fitting before and this was a really great experience– seems like it might be awkward, but it wasn’t at all.  Their sales staff talks to you about your style, your wardrobe and what kind of bra you usually wear.  There’s no tape measuring or sizing in the traditional way you might think.  They’re just that good!  Intimacy caters to every woman, regardless of shape, style or size. Intimacy promises: For every woman, we will find the “perfect fit”.

Per the experts, “It’s very important to wear a properly fitted bra for several reasons which include preventing breast sagging and harm, making your clothes look better and making you feel more confident among many others.  I learned a few things during my fitting as well— like, you shouldn’t wear the same bra more than twice a week.  And you need to hand wash them and let them dry hanging from the center bridge, not from the straps.  And believe it or not, a red bra is actually more like a neutral color– you can wear it under a white shirt and not be able to tell it’s red!  Who knew??!

After trying on a number of beauties, I found my perfect fit with this gorg Marie Jo bra in blue!  (36 C by the way…)  Here’s a model in my bra– cuz she’s got that whole “I model underwear on the reg” vibe going on…..(Oh, and there are cute matching panties too!)
